Vegetable loaf, made with green beans and potatoes, you can find it in shops with the sign “Torte e farinate”

Prepared solely with vegetable ingredients and completely without meat, nutritionally balanced and also suited to those who have a vegetarian diet. The secret for the good result of Ligurian-style vegetable loaf is the addition of fresh marjoram, “omnipresent”, rightly, in Genoese cuisine.

Ingredients for 4 people: 300 grams green beans without strings, 4 potatoes, 3 eggs, half a clove of garlic, half an onion, grated parmesan cheese, 3 sprigs of fresh marjoram, some dry mushrooms, extra virgin olive oil, salt, breadcrumbs, ground black pepper in powder.

Preparation. Set the dry mushrooms to soften. Boil the potatoes (with the peel on) and, after cleaning them, crush them with the potato masher. Meanwhile clean the beans and boil them in abundant hot water with salt added for 5 minutes after it comes to the boil again. Cut the beans into little pieces and put them in a frying pan with the oil and the butter: add the garlic (finely minced) and the marjoram and flavour it all for a few minutes. Add salt and pepper and leave to cool. Add the eggs, the parmesan cheese and the crushed mushrooms. Mix it all and, if the mixture is too liquid, add some breadcrumbs. Take a baking-pan, butter it, dust it with breadcrumbs and add the mixture. Level it with a fork, sprinkle it with abundant breadcrumbs and a little oil and bake for 30 minutes at 200 degrees.
