Savoury pancakes, also called cuculli, are titbits not to be missed

It is one of the oldest and tastiest dishes in the Ligurian tradition. Frisceu, also called cuculli, are savoury pancakes. Found in classy restaurants as a starter and sold as finger food in fry-shops.
They can be enriched with different ingredients such as lettuce, whitebait and also dried cod. But also shallot and simple oregano.

Ingredients: 100 grams of flour, 125 ml of fizzy water, 1 sachet of instant yeast, salt, frying oil.

Preparation. In a bowl put the flour, the salt or the sugar, the yeast. Dissolve the content with a little cold water, for a dense cream without clots to form, then slowly add all the water.
After preparing the batter, little by little put in the bowl the ingredients to fry (vegetable or fruit) cut in cubes. With a spoon recover one piece at a time to put it in a high-edged saucepan with the oil in it already hot. Put in enough pieces to cover the whole surface of the oil in the saucepan. When the pancakes are brown take them out of the oil with a skimmer and place them on a dish covered with a sheet of kitchen paper.
