The more the heat grows, the more you rather choose fresh and tasty food

In Liguria you can eat many recipes prepared with some typical products. The main product is the delicious fish from the Ligurian sea. Moreover, you can eat not only oysters and red shrimps, but also anchovies.

As side dish you should try condiggiùn, a mixed salad like the French salade niçoise prepared with anchovies, novel chives, tomatoes, green beans, basil, “taggiasche” olives, capers with vinegar and garlic.

Another typical seafood salad from the coast of Genoa is capponadda prepared with Green beans, tomatoes, onion, anchovies, olives, capers and traditional "gallette del marinaio".

There is also zimino, a typical ligurian sauce based on onion, tomato, garlic, herbs and extra virgin olive oil. There are several variants of zimino and during the summer it can also be eaten cold.

Ligurian people love quiches, a fresh and fast meal. There are many varieties of quiches, like “baciocca”, based on eggs and potatoes, rice cake, leek pie and “torta verde” (literally green cake) of western Liguria prepared with Albenga trombetta courgettes.
