Round, with a spongy appearance, pitted with holes and irregular … we are speaking of tasty Spungata or Spongata, a sweetmeat typical of Sarzana and environs. It is a simple dessert, cooked in the oven, peculiar for its filling, jam enriched by dry fruit, honey, aromas and spice.
